Chef Manami of Lady M New York Shares the Story Behind Her Cake Creations

Chef Manami, one of the original and senior pastry chefs of Lady M New York, shares the story and inspiration behind her famous cake creations.

 Lady M New York’s pastry chef is the key ingredient behind many popular Lady M cakes.

Chef Manami Narita is one of the original and senior Lady M New York pastry chefs. She joined Lady M in 2004 when there was just one Lady M boutique on the Upper East Side, and she is known for creating many popular Lady M cakes, including Rose Mille Crepes, Salted Caramel Mille Crepes, and Pistachio Mille Crepes

A graduate of Tokyo's esteemed Tsuji Culinary Institute, Chef Manami launched her career in NYC. She then headed to Asia (where she was based for the last decade) to help grow Lady M as the brand expanded in cities throughout mainland China, Hong Kong, Taiwan, and Singapore. Chef Manami successfully led the Lady M pastry team throughout Asia, training, educating, sourcing top local ingredients and creating new cakes. She is the heart and soul behind many beloved Lady M cake flavors.

The concept behind Lady M and Chef Manami’s creations is the marriage of French techniques with Japanese sensibilities. Lady M cakes' key components (sponge cake, mousse, custards, creams) require French techniques to create. For Chef Manami, who was born and raised in Japan, the Japanese influence of flavors and ingredients is innate. An example of this notably delicious pairing: The combination of French crepes with flavors popular in Japan such as rose and chestnuts (seen in Rose and Marron Mille Crepes). Lady M’s Green Tea Mousse Cake highlights this pairing too, combining French sponge cake and mousse techniques with Japanese green tea. Chef Manami’s favorite cakes? Signature Mille Crepes, Earl Grey Mille Crepes, and Checkers Cake.

An essential note: Chef Manami does not follow fleeting trends, choosing instead to create timeless, elegant, and most importantly, delicious cakes. Her ideas spring from day-to-day interactions and experiences. Upon learning that pistachio means “happy nut” in Chinese, Chef Manami sought to capture that playful, sweet essence in the form of a cake, and so, Pistachio Mille Crepes was born! Rose Mille Crepes features inspiration from lychee macarons devoured in Paris and the dreamy memories of rose petals from a candle-making workshop. Chef Manami’s ultimate secret? Paying attention to the details of daily life; it is where all treasures are truly found.
